A renowned chef who teaches CT what he knows is expanding the offerings. Here’s what’s on the menu

A popular cooking school is expanding its class offerings.

Founder and owner Frank Zabski, who also teaches the New Haven Pizza School classes will offer a shorter version of his New Haven-style pizza-making class beginning Oct. 20, geared for those who don’t want to spend three-and-a-half hours in class.

The “Short and Saucy” class will run for one-and-a-half hours for $75. Students will learn all the same material, but abbreviated, and leave having made a pizza.

“I’ve always felt I was alienating some people because not everyone wants to sit there for three-and-a-half hours,” he said. “These classes are for people with no patience to make pizza.”

Later this year Zabski will add, “Class of the Seven Dishes,” where he’ll teach a dough recipe that works to make seven dishes, including baked pizza, fried dough, stuffed breads, calzones, garlic knots, and Italian bread.

The dough is different because it’s a little sweeter and made with honey, he said. That class will be $125.

The other class he’ll add is called, “Pizza Archeology” and will be a lesson on pizza in Connecticut and throughout the country while students eat unlimited pizza.

The pizza school rating is five stars and students rave about the fun and Zabski’s teaching, especially his sense of humor and knowledge of everything pizza.

“The element of comedy will always be in there,” no matter the class length or type, Zabski said.

In addition to pizza making classes filled by the general population, Zabski holds team-building classes for businesses and organizations.

The classes are held at Michelina’s on State, 858 State St. in New Haven.

Zabski said he was in the information technology business for 30 years and has stepped back to run his unique school and help spread the word on New Haven-style apizza.

“I went from making a lot of dough to a little dough and I’m much happier,” Zabski has said of his career change.

Zabski’s Facebook page, “All About New Haven Style A’pizza (Ah-beetz)” with more than 17,000 followers has helped spread the word of New Haven-style apizza throughout the world.

Connecticut has officially been deemed the pizza capital of the United States and Barstool Sports founder Dave Portnoy, famous for his one-bite pizza ratings has said it’s the best pizza in the world.
