A new restaurant will offer free tacos, warm smiles and more when it opens this week in the Lehigh Valley.
Amigos Mexican Grill will hold a grand opening at noon Thursday at its location on the ground level of The Marquis apartments at 27 S. Third St. in Easton, CEO and co-owner Angel Ramirez said.
It will serve protein options like chicken, steak, pork and shrimp for dishes such as tacos, burritos, bowls and quesadillas. Customers can order the free tacos 12:30-2 p.m. on Thursday.
The new restaurant will join the Joint Coffee Co. location that opened about a month ago at The Marquis, according to manager Cynthia Nguyen, and Ramirez’s bar and lounge concept ZEN that will open this month.
Ramirez founded Amigos with CFO Kevin Rodriguez and chef Antonio Santiago in 2023 at 932 Hamilton St. in Allentown.
“When we opened up our first location here in Allentown, it was a major success,” Ramirez said. “A lot of people have come from a lot of different ways, but … when we started to look at demographic[s], we realized a lot of people come from Easton. And so when we had the opportunity to partner up with City Center and The Marquis — along with the other vendors like the Joint and ZEN — we knew it was just a no-brainer. We knew that was a spot for us.”
He added that what sets Amigos apart from other similar concepts is a sense of “unreasonable hospitality.”
“From the moment you walk in — it doesn’t matter what time of the day — you’re going to get warm[ly] welcomed by our whole staff,” Ramirez said. “You’ll get a ‘welcome to Amigos’ the moment you walk through the door. The moment you get to that front register, we’re going to greet you with our name. We’re going to introduce ourselves. We’ll pleasantly ask you for your name so we can address you by your name, and then we’ll use your name over 9 or 10 times on that line as we pass down your bowl. You’re just not another customer to us. You’re an amigo.”
Ramirez said they haven’t finalized the operating hours yet but that the new restaurant will operate 11-3 a.m. six days per week.
The seven-story Marquis is City Center Group’s first apartment building outside of downtown Allentown and the largest residential project in Easton history.
